1 lb fresh asparagus

1/3 cup olive oil

¼ cup red wine vinegar

1 Tbsp chopped fresh chives

2 tsp dried oregano, crushed

¼ tsp salt

¼ tsp pepper

4 to 6 plum tomatoes, sliced

Garnish:  chopped fresh chives




  1. Snap off tough ends of asparagus.  Cook in boiling water to cover 3 minutes or until crisp-tender; drain.  Plunge asparagus into ice water to stop the cooking process; drain.  Cover; chill 3 hours.
  2. Whisk together oil and next 5 ingredients.  Drizzle vinaigrette over asparagus and tomato slices; garnish, if desired.
