Put all ingredients in the food processor and whiz away until you have a ‘dough’. It will be pretty wet, so put it all in a bowl and chill for an hour or so.
Scoop using this small cookie scoop into balls. Place the balls on a cookie sheet. They will still be sticky even when chilled, so they’re totally great when rolled in coconut flakes (especially finely chopped coconut in the food processor). They shouldn’t need to be stored in the refrigerator for a few days (and you’ll be lucky to have any left after that time!).
