Evidently not.

Cue these Coconut Heaven Energy Bites.  Nnfnfmmmmbbb.  That’s me drooling again.  If you’re allergic or aversive to coconut, look away, infidel!  For these have boundless coconut goodness from start to finish.

A note about these:  they are very healthy, full of coconut and coconut oil, with healthy fats, vitamins and minerals, dietary fiber (I’m looking at you, IBS sufferers!), and protein.  True, you still can’t have too much fat – even the healthy kind – but honestly, the more fat something has, the fuller you’ll feel sooner so if you listen to your stomach, you’ll regulate yourself.  

They really don’t take much to make, and if you want to be really full of antioxidants and feel naughty even though you’re not (and who doesn’t?), drizzle some melted dark chocolate (at least 65% or really, you’re just fooling yourself) over each of them.  I prefer to make them very small, smaller than the picture shows so they truly are bite-sized, and I see no point in making the batch as is.  Double everything!  ‘Tis the way to heaven.  And thanks to SweetnessOfTheFruit.com for sharing your glory.

Coconut Heaven Energy Bites

makes about 8

Ingredients

  • ⅔ cup unsweetened shredded coconut

  • 1 ½ tsp. non-dairy milk (I used almond milk)

  • 2 Tbsp. coconut butter (for this, I had to research a bit.  I’d never heard of coconut butter, but really, it’s just pureed coconut flakes.  Here’s an easy how-to. I got a jar at Whole Foods.)

  • 1 Tbsp. virgin coconut oil

  • 1 Tbsp. agave nectar or raw honey

Procedure

  1. Mix the almond milk and shredded coconut to moisten the coconut a little. The texture will be a bit crumbly, do not use more milk, or the truffles will get soggy! Then add the agave nectar and mix.

  2. Put the coconut butter and coconut oil in a little bowl and soften in a hot water-bath; or if you are lucky and have a microwave, just warm it up in there.

  3. Warming the mixture is enough. Really heating the coconut butter would lessen it´s nutritional value.

  4. Then simply mix with the shredded-coconut-mixture and form into bite sized balls. And you are done!
