My dad has high cholesterol and – who knew? – oatmeal is a superfood for high cholesterol. And his all-time favorite cookie just happens to be oatmeal raisin cookies. Coincidence? I think not.
So I searched the Internet for a good low-carb oatmeal cookie (without raisins – too sugary to be low-carb), and this one doesn’t use flour or sugar (also not low-carb) but instead uses almond meal, flaxseed meal, and baking Stevia. Awesome!
