Is there anything in this recipe I DON’T like?  (That’s a trick question.)

Serves two

Ingredients

  • 12-ounce fillet of salmon

  • 1 tbsp shallot (finely chopped)

  • 2 tbsp parsley (chopped)

  • 2 tbsp basil (chopped, or use other herb you like)

  • 1 tbsp dill

  • 1 tbsp Lemon zest (finely grated)

  • 1 tbsp olive oil to mix the herbs

  • A pinch of flaky sea salt (to taste)

Directions

  1. Preheat to 250°F.

  2. Mix the herbs in a bowl and add the olive oil to form a rough paste.

  3. Pour the herbs on top of the salmon to form a thick layer. Coat both sides if you want, but coat one side is OK.

  4. Place the salmon in the oven on the middle rack.

  5. Bake for 25 – 30 minutes. Check for doneness at 20 minutes. If the salmon falls apart into flakes, it’s done. If not, return to the oven for another five minutes.

  6. Get out of oven and sprinkle the fillet sea salt.
