Easy-peasy recipe, as yummy as mashed potatoes, and WAY healthier.  Tastes just as good heated up from leftovers as it is fresh on the table for the holiday meal.

  • 2 heads cauliflower, leaves discarded and roughly chopped into bite-size pieces

  • 1 cup plain Greek yogurt

  • 1 Tbsp. chopped chives (optional)

  • ½ – 1 Tbsp. butter (optional)

  • ½ – 1 tsp. medium sea salt

  • ½ tsp. freshly ground black pepper

  • 1 packet Stevia

  1. Place the cauliflower pieces in a stockpot steamer (you could also boil them if you don’t have a steamer but a lot of the nutrients will leach out into the water that you’ll discard). Steam with the water on a steady boil until a fork will pierce the cauliflower easily (10-15 minutes).

  2. Mash the cauliflower to the consistency you prefer.  I like mine with a little coarser texture, but if you want a true, creamy, whipped consistency, try using a hand blender to puree it.

  3. Add the other ingredients to the mashed cauliflower and stir to combine.  You can serve it immediately or keep it warm in a warming drawer or heat it up when you want to serve it.
