Best rockfish I ever had was at Havana’s in downtown Norfolk, VA. Oh, MAMA! Turned me on to rockfish for life. Here’s a little something from our local newspaper, a clipping that, literally, fits in the palm of my hand. Now THAT’S a simple recipe!
2 or more Tbsp. butter
Pepper, to taste
Lemon juice, to taste
Melt a couple of Tbsp. of butter in a baking pan. Dredge a fillet in the butter and lay it in the pan, flesh side up. Sprinkle with pepper and lemon juice.
Keeping a close eye on the fish, broil it briefly on high until brown. Reduce the heat to around 350 degrees and cook for 10 or 15 minutes more, depending on the thickness of the fillet.
