Bon Appetit’s recipe from my dad’s work, which he LOVES.

Ingredients

  • 1 bunch fresh cilantro, most stems removed

  • 1 cup fresh lime juice

  • ½ jalapeno, seeded

  • 1 tsp. ground cumin

  • ½ tsp. salt

  • ½ tsp. smoked paprika

  • ¼ cup honey

  • 1 cup olive oil

Directions

  1. In a food processor or blender, add the first seven ingredients.

  2. Puree until you achieve a coarse blend.

  3. Slowly drizzle olive oil in, while continuing to blend (this will emulsify the vinaigrette).

  4. Store in the refrigerator for up to one week.
